Canvas serves both traditional and modern Maghrebi cuisine originating predominantly from Morocco, Tunisia and Algeria. French Algerian Chef Pierre Khodja's menus are an abundance of colour, perfume and flavour. Sharing dishes banquet style is strongly encouraged, quickly turning your experience into a voluptuous and sensual feast. Pierre delights in creating traditional recipes which rest firmly with his Algerian heritage but he delivers with the master stroke born of his classic French training. The result is a menu which is 'accessible, elegantly spiced, balanced, imaginative and entirely delicious' (Bob Hart, Herald Sun). Signature dishes include chicken bastilla, stuffed quail with grapes and almonds, rabbit paella with octopus and cinnamon and Lamb tagine. This unique style is also extended to the casual bar menu featuring Moroccan chicken pizza and Salt Cod Croquettes with orange and fennel salad. |
